In which our hero proves to be soup obsessed, but livens it up with chicken with a BANG!

Howdy folks!

So September sent me this first part, a nice spicy chicken, here's the ingredients:

1 whole chicken (medium, organic is better)
4 oz diced mild green chiles (or hotter if you prefer)
2 teaspoons chili powder
1/4 tsp Cayenne Pepper
1 tsp Cumin
1 tsp Salt
 tbl. olive oil
2 cloves garlic
1 onion medium, diced
3/4 cup chicken broth (I use Bouillon, it's gluten free)

Pretty simple stuff after that, I modified this a bit as I prefer to oven cook.

Put chiles, chili powder, cayenne, cumin, salt olive oil, garlic, onion and chicken broth in a crock pot.
 
Stir together. Add chicken. Cover pot tightly. 
 
Place in over at 180 degrees c, the finished article will look a little like this!


When done remove from pot, place on plate and cover with foil, make sure to drain the liquid out of it. 

Now, that's 'tember's recipe.  and it's an AMAZING way to cook a chicken, just falls off the bone, but me personally I kinda had to see stuff go to waste, and the left over stock/liquid smelled awesome, so here's what I did.

Move the stock to a pan and add the following to it:

1 turnip
1 large onion
3-4 carrots (size depending)
1 parsnip (size depending) 
Mushrooms (about 100-150g)
Bout a handful of Spinach
About 1 pint of water, depending on how thick you like your soup. 
Cumin to taste
Chillies to taste

Now,  I personally like  to blend my soups, so I don't worry too much about dicing the veg, but you'll want to chop it carefully if you prefer it chunky.  You'll maybe want to add a little more spice to the mix depending on how hot you want your soup!
 
 Bring to the boil and simmer for about an hour, then blend it if you're going to.  Add salt and pepper to taste and you're done!

Now, this is probably one of the healthiest and most warming things to eat and it's pretty low calorie all things considered, enjoy!
